For the Sandwich::

Eggplant, flour, water, bread crumbs, Italian seasoning, ripe tomatoes, lemon juice or salt, pepper jack cheese, bread of your choice

Eggplant, flour, water, bread crumbs, Italian seasoning, ripe tomatoes, lemon juice or salt, pepper jack cheese, bread of your choice
Directions:
Slice the eggplant into ½ inch wide slices
Mix a cup of water and add flour until the a thick mixture is formed
Mix one cup of bread crumbs with a spoon of homemade Italian seasoning (parsley, oregano, basil, pepper flakes, garlic powder)
Dip eggplant slices into the flour+water mixture, then dip into bread crumb + Italian seasoning mixture
On a skillet in medium heat, place the eggplant slices and cook both sides until cooked and bread crumb is a crisp golden brown color
Peel tomatoes and blend in food processor or blender, add lemon juice or salt for taste
Place eggplant on bread of your choice, add a slice of pepper jack cheese, and add a layer of sauce on top and enjoy!
