Ingredients:
1 28oz can of chopped tomatoes
¼ cup of olive oil
Salt & Pepper to taste
1 celery stalk, diced
1 carrot, diced
1 medium yellow onion, diced
3 cloves of garlic
2 cups vegetable or chicken stock
½ cup fresh basil (chopped) or 2 tsp. of dried basil
1/4th cup of milk or cream (optional)
Directions:
Preheat Oven to 450 degrees F. Strain the tomatoes and reserve the tomato juice for later. Spread tomatoes on a baking sheet covered in foil. Add garlic cloves with tomatoes and drizzle 2 tsp. of olive oil over tomatoes and garlic. Roast for 20-25 minutes.
In a sauce pan, add the remaining oil and sauté celery, carrots, and onions on medium heat for about 10 minutes. Add roasted tomatoes, tomato juice, vegetable or chicken stock. Simmer until veggies are tender and add basil and milk or cream.
Always enjoy tomato soup with a grilled cheese! Add a little extra, put a few slices of avocado between the cheese and grill. Enjoy!!
